Abstract: The aim of this study was to evaluate the antioxidant activity of hydroalcoholic extracts obtained from Thymus vulgaris leaves and shoots of Pinus sylvestris. It was also spectrophotometrically determined polyphenol carboxylic acid concentration expressed in caffeic acid and flavonoids expressed in quercetin concentration. Antioxidant activity was determined spectrophotometrically using the DPPH system to generate free radicals. This was expressed as quercetin milimolar reported to appropriate units of measurement for each sample. The results obtained showed that for the extract obtained from the leaves of Thymus vulgaris the concentration of polyphenolic compounds was higher than that of the Pinus sylvestris shoots extract. In addition, maceration extracts compared with ultrasonic extracts was more effective, the first ones containing a higher amount of antioxidants targeted. Also, after studying the antioxidant activity of the two extracts it was determined a correlation between this and concentration of polyphenolic compounds.
